Our Clarksburg Chardonnay is barrel fermented, offering a classic sur lies nose with hints of yeast and toast. We start by pressing the grapes into stainless steel tanks where they are cold settled. We add yeast to get the fermentation started in a homogenous manner. We then divide it among barrels where we stir, or “battonage”, the barrels and fermenting juice daily for the first week. The barrels this wine was fermented and stored in were neutral French oak, so any toasty vanilla comes from the actual fermentation process combined with fruit.
