This Tannat is a classic partner for grilled meats, game, and aged cheeses. Marinate a butterflied leg of lamb overnight with garlic, rosemary, soy sauce and olive oil. Grill it slowly over a wood fire to develop lots of chewy browned edges, keeping the thicker pieces rare while the thinner parts become more well done. It’s a savory match for this bold Tannat.
