Food Pairing Notes
The 2014 Souzão is complex, multilayered, and a versatile food partner. Its smooth tannins handle heat well. In Portugal, Cataplana is the name of both of the long-simmered spicy pork stew with tomatoes, chili pepper, paprika and clams, and the traditional covered pot in which it’s cooked. It’s a great example of simpático regional food and wine.
