The bright cherry, plum and mint of Cabernet is a beautiful complement to Tannat’s earthier tones of leather, black fruit, and smoky spice. Extended aging in new American oak barrels adds a background of vanilla and caramel.

This is a full-bodied wine, so broadly speaking you can’t go far wrong pairing it with any red meat. Grilled beef, lamb or venison with fresh herbs and cracked pepper will be a hit, but also consider a slow simmered dish like lamb shanks braised in red wine with shallots, smoked bacon, and fat white beans.
