We are excited to present our first wine crafted in the appassimento style, where grapes are partially dried before fermentation to concentrate flavor and richness. Three Texas Hill Country vineyards were selected to hand harvest pristine clusters of grapes to make this wine. The clusters were meticulously laid out for outdoor air-drying, which concentrated the flavor, sugar, and acidity in the grapes. Classic in other parts of the world, this wine style is unique for Texas.
