Grapes are whole cluster pressed then cold settled for 48 hours. The juice is started in tank then moved to barrel at 10 brix to complete fermentation. We use the battonage technique to suspend the yeast during fermentation, giving toast and body to our rose. The wine is aged in barrel on the lees. It does not go through malolactic fermentation.
