A combination of Flash Détente maceration and conventional fermentation in small lots allow us to dial-in the optimum extraction profile for every vineyard block. Most lots are aged in neutral oak barrels for six months, while a few vacation in stainless steel for maximum fruit character. The final blend is greater than the sum of its parts.
