Tasting Notes
This Texas High Plains AVA Cabernet Sauvignon shows garnet color, with notes of tart cherry. Even with age, the wine still exhibits fresh red fruit flavors. It is the only Texas Cabernet Sauvignon to win Double Gold at the San Francisco International Wine Competition (2013).

Winemaker Notes
The 2010 Newsom Cabernet Sauvignon is maturing gracefully. Tannin is an antioxidant that helps preserve the freshness of fruit flavors and color. Over time tannins soften, becoming silkier and lending inimitable elegance to the balance. Bottle aging reduces the needs for breathing upon opening. Decanting is still useful, but older wines oxidize more rapidly in the decanter than young, full-bodied wines.
Food Pairing Notes
Avoid heavy spice rubs and rich sauces in favor of the simple inherent qualities of the food. Aged beef like a velvety grilled tenderloin is an excellent complement to both the flavor and texture of the mature Cabernet. Oven roasted wild mushrooms with a red wine reduction, and firm old cheeses are also premium matches.
