Tasting Notes
Lush cherry, with notes of cola, mint, cedar and violets are the hallmarks of Tannat EM, Bella Collina Vineyards.
Winemaker Notes
The skins of the must were left in contact with the wine for around 30 days after fermentation. Counterintuitively, extended maceration (EM) produces a wine paler in color and silkier on the palate. Tannins polymerize into longer chains, and color drops out, making the subtle fruit flavors more accessible.
Food Pairing Notes
This mature Tannat EM still pairs well with robust dishes, perfectly matching roast beef tenderloin, charcuterie, and aged cheeses.
